One thing I did do today, was make the kids breakfast. They requested pancakes, so I busted out our most favorite recipe, which I share below. These are heart healthy, tasty, filling, and oh-so-good! With a big glass of cold milk (or big honkin' cup of tea in my case), this is a satisfying stick to your ribs start to the day!
Heart Healthy Oatmeal Pancakes
1c. quick-cooking oats
1c. all-purpose flour
2Tbsp. sugar
2 tsp. baking powder
1 tsp salt
2 eggs, lightly beaten
1 1/2 c. milk
1/4 c. canola oil
In a large bowl, combine dry ingredients. In a smaller bowl, combine eggs, milk and oil. Add to dry ingredients; stir just until moistened. Drop by 1/4 cupfuls onto hot griddle. When pancake starts to bubble, flip and cook on opposite side until golden brown.
That's it!! Simple, good fare your family will love! Some of my secrets: my 10 year-old loves these with mini chocolate chips! Just add a smattering of mini chips to the batter.
My husband loves to spread his with peanut butter!
I sometimes also add a little cinnamon to the batter. These are also yummy spread with a little mashed up bananas! Use your imagination... I promise - these will become a Saturday (or snow day) morning staple in your house! I'd love to know what you think after you try them.
