Shameless Plug For My Crock-Pot Blog

Tasty Tuesday.... Monkey Muffins

Monkey Muffins

1/2 c. butter softened (1 stick)
1 c. plus 1 Tbsp. sugar, divided
2 eggs
1 c. mashed ripe bananas (about 2)
2/3 c. peanut butter
1 Tbsp. milk
1 tsp vanilla extract
2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
3/4 c. mini semi-sweet chocolate chips

In a large bowl, cream butter and 1 cup of sugar until light and fluffy.  Add eggs, one at a time, beating well after each addition.  Beat in bananas, peanut butter, milk and vanilla.
In a small bowl combine flour, baking soda, and salt.  Add to creamed mixture.  Mix just until moistened.  Stir in chocolate chips.
Fill greased or paper lined miniature muffin cups 3/4 full.  Sprinkle with remaining 1 Tbsp. sugar.

Bake at 350 degrees for 14 - 16 minutes or until a toothpick inserted in center of a muffin comes out clean.  Cool for 5 minutes before removing to wire racks.

***** these are amazing.  One word of advice... make sure you have plenty of milk on hand!  You can't eat these without a big tall glass of ice cold milk!  :)
