Tasty Tuesday... Mom's Best Ever Meatloaf!

We haven't done a "Tasty Tuesday" in a while, so I thought it was time to start sharing some recipes again!

The air is getting cooler, the days are getting shorter, and it's time to start cooking those great "stick-to-your-ribs" kind of meals.

Now, as a rule... my family does not like meatloaf.  But the other night, when we were having our celebration dinner for our "new beginnings", my younger son requested meatloaf.  I thought, "really?".  But he said he really wanted it.  So I went online to try to find a fab-oo recipe that we would all like.

This was what I found, then tweaked it a little.

Mom's Best Ever Meatloaf

1 lb. ground beef
1 lb. ground pork
1 (10 3/4 oz.) can tomato soup
1 envelope onion soup mix
1/2 c. bread crumbs
1 egg, lightly beaten
1/4 c. water

In a large bowl, thoroughly mix beef, pork, 1/2 c. of the  tomato soup, onion soup mix, bread crumbs, and egg.

Place into a 9" x 13" baking pan and shape into a firm loaf

Bake at 350 for 1 hour and 15 minutes, or until meatloaf is cooked through.  Remove meatloaf to a serving plate and let stand 10 minutes before slicing.

Meanwhile, pour water into pan and stir to loosen drippings.  Add drippings to remaining tomato soup and heat until bubbly.  Serve as a gravy/sauce over meatloaf.

***my meatloaf took a little longer than an hour & 15.  When the timer went off, I took it out of the oven and poked several holes in it with a fork.  Then I cooked it for like 10 -15 more minutes.  This also helped to create more pan "juices" to use for the gravy.

I finally found a recipe for meatloaf that we actually all liked!!
I'm telling you, this came out sooo good!  We had it with rice-a-roni, but I think it would be divine with mashed potatoes!
